Charred Halloumi Salad with Fresh Vegetables and Lemon-Mint Yogurt Dressing
The inspiration
Greens, Arugula or Thinly Sliced Kale, as needed
Charred Halloumi, ½-in. thick slices, as needed
Watermelon or Breakfast Radish, sliced, as needed
Cherry Tomatoes, halved
Crispy Sumac-Spiced Pita, cut into small pieces, needed
Avocado, sliced, as needed
Cucumber, peeled and sliced, as needed
Lemon-Mint Yogurt Dressing (recipe follows)
Toasted pine nuts, to garnish (optional)
Lemon-Mint Yogurt Dressing (Yields 1 cup)
- 1 cup Oikos Greek Yogurt
- ½ cup Mint leaves, minced
- 2 each Garlic Clove, minced
- 1 each Lemon, zested and juiced
- ½ tsp. Ground Cumin
- ¼ tsp. Cayenne Pepper
- Kosher Salt, to taste
- Freshly Ground Black Pepper, to taste
The Technique
To prepare the Lemon-Mint Yogurt Dressing
1. Place yogurt, mint, garlic, lemon juice, cumin, and cayenne in a small bowl and stir to combine. Season with salt and pepper to taste. Let sit for 30 minutes, then hold for service.
To serve:
2. Assemble salad – top arugula with halloumi, radish, tomatoes, spiced pita, avocado and cucumber. Drizzle with dressing and top with pine nuts.
