Green Goddess, Prosciutto and Egg Sandwich

Featuring Oikos Plain Greek Yogurt

The inspiration

  • Green Goddess Dressing, as needed (recipe follows)
  • 4 each English Muffins, split and toasted
  • 4 each Fried Eggs
  • 4 each Crispy Prosciutto slices
  • 1 cup Greens, Spinach or Arugula
  • Green Goddess Dressing
    • ¾ cup Oikos Greek Yogurt
    • ½ cup Scallions, chopped
    • ½ cup Basil Leaves, chopped
    • ½ cup Spinach Leaves, chopped
    • 1 each Lemon, juiced
    • 1 each Garlic Clove, chopped
    • 1 tsp. Anchovy Paste
    • ½ tsp. Kosher Salt
    • 1/8 tsp. Freshly Ground Black Pepper

The Technique

To prepare the Green Goddess Dressing:

1. Place the yogurt, scallions, basil, spinach, lemon juice, garlic, anchovy paste, salt and pepper in a blender or food processor and blend until smooth. Hold cold or room temperature for service.

To serve:

2. Assemble egg sandwich – spread one tablespoon on each muffin half. Add one egg to the bottom half of muffin then top with the prosciutto and greens. Add the top muffin.
