Green Goddess, Prosciutto and Egg Sandwich
Featuring Oikos Plain Greek Yogurt
The inspiration
Green Goddess Dressing, as needed (recipe follows)
4 each English Muffins, split and toasted
4 each Fried Eggs
4 each Crispy Prosciutto slices
1 cup Greens, Spinach or Arugula
Green Goddess Dressing
- ¾ cup Oikos Greek Yogurt
- ½ cup Scallions, chopped
- ½ cup Basil Leaves, chopped
- ½ cup Spinach Leaves, chopped
- 1 each Lemon, juiced
- 1 each Garlic Clove, chopped
- 1 tsp. Anchovy Paste
- ½ tsp. Kosher Salt
- 1/8 tsp. Freshly Ground Black Pepper
The Technique
To prepare the Green Goddess Dressing:
1. Place the yogurt, scallions, basil, spinach, lemon juice, garlic, anchovy paste, salt and pepper in a blender or food processor and blend until smooth. Hold cold or room temperature for service.
To serve:
2. Assemble egg sandwich – spread one tablespoon on each muffin half. Add one egg to the bottom half of muffin then top with the prosciutto and greens. Add the top muffin.
