Chocolate Strawberry Soy Yogurt Parfait

The inspiration

  • Silk® Vanilla Soy Dairy-Free Yogurt Alternative (6) 24 ounce containers

  • Cocoa Powder, 3 ounces

  • Raspberry puree, frozen, thawed 3.125 pounds

  • Strawberries, sliced IQF, thawed 10.5 pounds

  • Granola, 6.25 pounds

The Technique

1. In a large bowl mix together half of the Silk® Vanilla Soy Dairy-Free Yogurt Alternative (72 ounces) with 3 ounces of cocoa powder, leaving aside the remaining Vanilla Soy Dairy-Free Yogurt Alternative.

2. Keep cold, below 41 degrees.

3. To assemble parfaits: Add a 2 ounces of chocolate Silk Soy Vanilla mixture to a parfait cup and top with 2 ounces of Silk Soy Vanilla yogurt, ½ ounce of raspberry puree and ¼ cup of strawberries. Repeat with 2 ounces of chocolate Silk Soy Vanilla mixture, 2 ounces of Silk Soy Vanilla yogurt, ½ ounce of raspberry puree and ¼ cup of strawberries. Serve 2 ounces of granola on the side.

4. Optional garnish, dust with a small amount of cocoa powder.
