Broccoli Cheddar Mac and Cheez
The inspiration
1 cup Macaroni Noodles, Cooked
1 cup Broccoli Florets, Blanched
1 cup Dairy-Free Queso Sauce (sub recipe below)
½ cup Herbed Panko Bread Crumbs
DAIRY-FREE QUESO SAUCE Makes 8 servings
- 7 cups So Delicious Cheddar Shreds
- 1 cup So Delicious Coconutmilk, Original Unsweetened
- 2 tsp Kosher salt
HERBED PANKO CRUMBS Makes 8 servings
- 4 cups Panko Bread Crumbs
- 2 tsp Kosher salt
- 1 cup Fresh Herbs, Minced
- ½ cup Extra Virgin Olive Oil
The Technique
1. Mix cooked noodles, broccoli, and queso sauce together. Spoon into an oven-proof bowl.
2. Top noodle mixture with panko crumbs.
3. Bake for 10-15 minutes in 375°F oven until hot and bubbly.
DAIRY-FREE QUESO SAUCE
1. Heat all ingredients in a pot on medium heat, stirring often to avoid scorching. Heat until cheese sauce is smooth. If cheese is still a little chunky, run through Vitamix.
HERBED PANKO CRUMBS
1. Mix all ingredients together in a bowl until well-combined.
