  • Silk® Vanilla Soy Dairy-Free Yogurt Alternative 12.5 quarts

  • Raspberry puree, frozen, thawed 3.125 pounds

  • Raspberries, whole IQF, thawed, drained 6.5 pounds

  • Granola 6.25 pounds

The Technique

1. To assemble parfaits: Add a layer of 4 ounces of Silk® Vanilla Soy Yogurt Alternative with ½ ounce of raspberry puree and 1 ounce of frozen thawed and drained raspberries. Top with another 4 ounces layer of yogurt alternative, ½ ounce raspberry puree and 1 ounce frozen thawed and drained raspberries. Serve 2 ounces of granola on the side.

*Keep cold for service, below 41 degrees
